Also known as Australian Black or Perigord truffle this is the famous winter truffle that foodies the world over delight in. Available only during winter from late June to late August this seasonally delicacy shouldn't be missed. Please note to make up size this may not be a whole truffle. If you wish to specifically have a whole truffle please contact us to find out weekly availability.
Amount needed: 10 grams per person.
It is best to allow around 10 grams per person when purchasing truffle however this will need to be adjusted depending on the dishes you use (ie. if you are infusing truffle as opposed to grating it on top). See our truffle basics in our recipe section to learn more.
Shelf life: up to 14 days
Truffle slowly loses its flavour and intensity over time so it is best to use your truffle when it is fresh to get the most flavour. Truffles are still suitable for use up to 14 days after being received provided they are stored properly.

If your truffle does not meet your expectations please contact us to discuss. As truffles have dozens of scent profiles its not possible to guarantee a particula scent but all truffle will be beautitful, fresh and ripe.
All truffles are sent express post with Australia post. For Brisbane and Gold Coast customers this means your order should be received the next day (for orders received by 9am). However, please note sometimes Australia post can take longer.
The truffles are sent with ice bricks in insluated packaging to ensure they stay as cool and fresh as possible during transit.
When you receive your truffle it is important to unpack it and re-wrap it in a piece of paper towel before storeing it in an airtight container in the fridge.
It is best to change the paper around the truffle every 1-2 days. It is possible your truffle may develop some surface mould. If it does gently wash your truffle under cold water, scubbing with a clean brush is optional. Then dry with a paper towel or cloth before wrapping in paper towel and placing back in the airtight container in the fridge.
